Where can I see changelog between beta versions (b1, b2, etc)? Also If I use a beta version, how can I see which beta version I'm using, so I know I'm using the most resent version?
For my information, both info aren't accessible.

Of course you can goto github and look at commits on hotfixes, or Check the milestone
I also keep tags for current beta as bx but they are deleted when merged into stable

If there would be a beta2, would you make a new tag called
v3.3.3b2, or is that just overwritten?
Also in the admin -> support section of a GS-site wouldn't it be handy to see the version of the beta listed, so 3.3.3b1 instead of only 3.3.3b?

yes and you can compare them by either looking at all commits after the first date or using githubs comparison tool that compares branches or tags etc.
its a bit time consuming and 1 more thing to do.
