For videos on installing, and managing webapps, I used once early version of captuerfox: http://www.advancity.net/eng/products/capturefox.html
But it won't be suitable for deployment, as I'd go with uploading whole archive through ftp, and using an exec or shell_exect command from php interpreter on the server.
So many screencasting apps appeared lately, that I lost the recognition.
I still have http://www.debugmode.com/wink/ and http://xvidcap.sourceforge.net/ in y bookmarks and they did their job. Guys on macs have tons of such software, but
http://www.screenr.com/
http://www.screenpresso.com/
http://www.webinaria.com/
http://www.recordscreen.com/
http://www.sameshow.com/democreator/tuto...-area.html
seems to be also very appealing
Of course those who use video editing apps have such features built inside those applications.
