I would love to have the option to have different templates assigned on a page by page basis if required. This would be a great feature not so much to totally replace templates with a new design, but would be helpful if you need to have variations in themes.

This is already possible by choosing the "template" option within the page options of the page edit screen. Any PHP file you add within your theme directory will show up in that dropdown box.
