Duh...

I see talk about 'tagging' images - say 'animals', 'plants' etc and then using these tags to filter images into galleries. I've got the (excellent) gallery plugin working with random images but would like somebody to explain in idiot mode how I 'tag' images..??

Assuming you are using I18N Gallery, for each image you can enter a title, tags (keywords) and a description (see screenshot).
Just enter your tags/keywords in the top right field, separated by comma.
