Hey guys!
http://www.loficoffee.com is my third site using get-simple. My other sites are
http://www.shoutinginfrench.com and
http://www.coffeeandteaexpress.com .
The theme is just a hacked up version of a little base theme I made called boxy
http://www.shoutinginfrench.com/gsthemes/boxy/ . The coffee shop is also the reason I haven't been packaging up any of my themes, i have about 3 more done.

Those are some nice sites with GS. I do particularly like the first one.
I have yet to install my first site with the software.

I made
http://www.coffeeandteaexpress.com as an attempt at a fully fluid CSS, and it was before I had learned how to use a lot of Child based functionality of GS.
http://www.shoutinginfrench.com I wanted fixed width but not height to give it a bloggier feel. I was able to use html5 for that one in a lot of the CSS.
The final one
http://www.loficoffee.com I did on kind of the fly, and it's still a little bit choppy as I'm trying to figure out a way do a completely fixed CSS with the content being bloggish in nature. I'm having a hard time getting a good look and feel while keeping it fixed height. I tried overflow with that content block, but it just never seemed to work out.
