What Theme are you using ? You are not using your own Theme but you are using a Theme that already came with GS.
When you installed GS, it came with 2 Themes: Innovation and Cardinal. The reason why you only have 1 template
available is because you are using a Theme that was made with only 1 template, the default template.
Did you at least read the Docs about GS, or go through the forum ?

Unlike so many other cms systems where you have to work the way the cms was made by rules,
GS was made to give you total freedom in the way how you make websites:
make your own templates and themes in any way you want.
